I recommend you to do it with the touroperator "Slow Travel" (www.slowtravel.cl).
You can make wine-tours where you get to know the owners of the wineyards and taste chiles best wines (and they are really good!). They also offer culinary tours. I visited the fischmarket and the fruit/vegetable market with a profi-chef and later on we cooked together chilean traditional plates. delicious!
