It’s summer, it’s hot, and you don’t want overly fancy cocktails — you just want something tasty that comes together in a few seconds. So we present you these stupid-easy beach drinks (or rooftop party drinks, or poolside drinks; whatever suits).
All of these require just pouring a few ingredients together. No shaking, no juicing, no syrup-making, minimal measuring. Just combine everything, stick it in your cooler to chill, and you’re good to go. Easy enough to serve at the beach. (We know because we tried it.)
You might not think of whiskey when you think of summer, but this cocktail will change your mind. Add lemonade and mint and it’s refreshing as can be. Making your own lemonade is always best, but if you get a high-quality store bought version instead, we won’t rat you out.
At home: Combine 9 ounces of bourbon (we’re using Old Forester), 3 cups of lemonade (the fresher the better), and two big handfuls of fresh mint leaves Keep chilled in a sealable container until ready to use.
At the beach: Pour into a glass with ice and garnish with a mint sprig. Makes 6.
Gin, Aperol, and Orange
A little sparkle in a summer cocktail is always a good thing, and here we’re using Pellegrino’s Aranciata, the awesome Italian orange soda. Add gin and Aperol and you’ve got a sipper that’s way more sophisticated than anyone else’s beach drink.
At home: Combine 9 ounces of gin (we’re using Beefeater) and 3 ounces of Aperol. Keep chilled in a sealable container until ready to use. Bring along 2 cans of fancy orange soda like Pellegrino’s Aranciata.
At the beach: Divide evenly between 6 glasses with ice. Pour a third of a 12-oz can of Aranciata atop each one. Garnish with an orange half-moon.

Rum & Grapefruit
Grapefruit and funky Jamaican rum are a great pair, particularly when you add Angostura bitters — rum’s best friend. The combination gives you a cocktail that recalls tiki flavors, but is far, far simpler than those twelve-ingredient drinks served in pineapples.
At home: Combine 9 ounces of Jamaican rum (one cup plus two tablespoons), 3 cups of grapefruit juice (the fresher the better), and 10 big dashes of Angostura bitters. Keep chilled in a sealable container until ready to use. Bring along club soda.
At the beach: Divide evenly between 6 glasses with ice. Pour about 1 ounce of club soda on top of each one. (1 ounce is about one big glug from the bottle. Yes, we’re using “glug” in a recipe.)
