The assortment of hot and cold dishes—like smoked reindeer sausage, carrot-and-cumin herring, and Tvarno ham with melon salsa—are to be sampled in small portions, in several courses, accompanied by crispbread and boiled potatoes, then chased with shots of aquavit and frosty Scandinavian beer.
