Danny Meyer—the suave, smiling mastermind behind Gramercy Tavern, Union Square Cafe, and other enduring New York classics—turned a concession for a hot dog and hamburger stand in Madison Square Park into an unexpected chain of burger joints (expanding recently to Dubai).
