Need more Merlot in that Médoc?New barrel-blending programs around the country let oenophiles fine-tune wines to suit their own palates. During a two-hour course at The Phoenician (Scottsdale, Ariz.; 480/423-2530; www.thephoenician.com; $135), you can choose from six Bordeaux varietals to create and bottle a signature cuvée, complete with a personalized label. But don't uncork it yet; your blend will have to age at least one year. For more immediate results, Urban Wineworks (407 N.W. 16th St., Portland, Oreg.; 866/467-4668; $25) uses newly harvested varietals—Cabernet Sauvignon, Merlot, and Cabernet Franc—that can be sipped straightaway. The Phoenician keeps students' specs on file so you can sample more of your vin everytime you visit; Urban ships customized cases within the U.S. (where legal). Get your cellar ready.
