Set inside a gorgeous red-stone mansion dating back to 1786, a new five-star hotel opened in Toulouse this month. Just a block from the Garonne River, the restored La Cour des Consuls Hotel & Spa offers guests 38 rooms and suites decorated by designer Chantal Peyrat, in addition to a four-room spa with treatments featuring Graine de Pastel products.
Beyond the stunning facade (and two secluded courtyards), various architectural features around the hotel have been classified as official historic monuments—like the 18th-century grand staircase, which spirals up four stories, and is embellished with oak wreaths. In the très chic champagne and caviar lounge (this is France, after all), there are vintage leather sofas, exposed rafters, and floor-to-ceiling drapes.
But it’s the dining room, furnished like an elegant country house, with an original stone fireplace and wall-length reproduction of Caravaggio’s Supper at Emmaus, that is the hotel’s undisputed acme of style. Le coeur de La Cour, if you will.
In the kitchen is Michelin-starred Chef Jérôme Ryan, who grew up in rural Bourg-en-Bresse (near the Swiss border), and eventually went on to become deputy chef at Hôtel de le Cité, another luxe hotel in Carcassonne.
The menu highlights vineyards from the nearby Languedoc-Roussillon region, and, perhaps inspired by his peers at Au Bon Servant and Solides, Chef Ryan will focus on regional fare with a modern twist.
