At Four Seasons Resort Nevis (www.fourseasons.com), kids can "adopt" a satellite-tracked animal to trace on-line back home. Guests at Antigua's Jumby Bay (www.rosewoodhotels.com) take nighttime walks to watch hawksbills lay their eggs. And at Costa Azul Adventure Resort (www.costaazul.com), near Puerto Vallarta in San Francisco, Mexico, families help shepherd baby olive ridleys or leatherbacks into the water. Sadly, only one in a thousand hatchlings makes it to adulthood.
