I'm tired of people thinking that organic means hippie," says shoe designer Vanessa Noel, who, with the opening of her second Nantucket inn, has entered the eco-movement. In the center of town, adjacent to her shoe shop, Hotel Green has an organic restaurant and 10 guest rooms that combine Noel's eye for design with substance: mod chairs made from recycled cardboard sit on jute rugs ("So earth-friendly," she jokes, "you could put them in your garden"); neon Pop-Art prints hang on walls covered with milk-based paints. Even the cleaning products are all-natural. "This hotel is a great teaching venue," says Noel, who provides instructive eco-literature for bedside reading. "My goal is to inspire."
