A series of wood-paneled rooms with vintage photographs, playbills, and memorabilia (including a collection of 90,000 clay pipes) make up this iconic chophouse, serving meat-obsessed New Yorkers since 1885. And it doesn’t appear to have changed much since its Victorian-era naissance. The emphasis is, rightly so, on perfectly charred, oversize servings of dry-aged beef, though the signature dish is the mutton—actually a juicy, fatty saddle of lamb, and it’s legendary for a reason.
