Lucky for Austin, chef Shawn Cirkiel chose to cook pizza in a wood-fired brick oven from Naples at a temperature of 900 degrees. Pizza topped with fennel sausage, mozzarella, roasted peppers, and garlic; pizza pepperoni Americano with picante salame, tomato, mozzarella, and basil; pizza bianca with arugula, mozzarella, ricotta, and pecorino Romano; and roasted mushroom pizza with ricotta, tomato, capers, and thyme.
