He buys fish from both coasts of the country, which means the creamy uni, or prickly sea urchin, tastes like it’s just been plucked from salt water. Yamato, who overseas this hip, bustling restaurant, enjoys trying out new dishes on a whim too, such as a summer sashimi roll filled with cucumber, fresh salmon, and king crab drizzled with ponzu sauce. But at the end of the day, the fish is the star.
