Philadelphia is adding three stars of fusion cuisine to its ever-growing list of high-profile chefs. Cuban-American Douglas Rodriguez's nuevo latino specialties include plantain-crusted halibut and red bean soup with pumpkin and chorizo at Alma de Cuba (1623 Walnut St.; 215/988-1799; dinner for two $100), which evokes a pre-Castro tobacco plantation. Masaharu Morimoto, best known for his recurring TV role on the kitschy Iron Chef, left New York's Nobu to open Morimoto (723 Chestnut St.; 215/413-9070; dinner for two $125), where he spikes traditional Japanese dishes with outré ingredients like beer and foie gras in an interior by equally unconventional designer Karim Rashid. Chef Roy Yamaguchi, who practically invented the term fusion, brings a taste of Hawaii to town with Roy's Philadelphia (124 S. 15th St.; 215/988-1814; dinner for two $120). The Pacific Rim- influenced menu features short ribs and crab cakes, but nary a pupu platter.
