San Crispino gelato—considered by many locals to be the best in Rome—is made and served under exacting conditions. The company uses only all-natural ingredients (no preservatives or emulsifiers), insists that its product be served at particular temperatures, and offers its scoops only in cups (cones would apparently undermine the integrity of the taste). If it all sounds like a lot of trouble, the results—impossibly creamy desserts in flavors like chestnut-rum, licorice, and ginger-cinnamon—are well worth it.
