Located in the Renaissance Pere Marquette Hotel, Bar Uncommon serves classic and original cocktails created by acclaimed fourth-generation bartender Chris McMillan. The bar is sleek and stylish, with bright red furniture, black-and-white-patterned pillows, candlelit tables, and an installation of glass orbs hanging from the ceiling. However, the main focus here is the cocktail selection. There’s no menu; McMillan either creates a drink based on the customer’s preference or reinvents a classic with his own recipe and fresh seasonal ingredients. Favorites include the Pimm’s Cup and McMillan’s original Gin Deaux, made with Plymouth gin, candied ginger, and lemon juice.
