Excited about: Chile’s emerging Chiloé archipelago. There’s now a direct flight from Santiago, making the remote region much easier to get to. New hotels include the contemporary 12-room Tierra Chiloé, where guests can hop on the property’s own boat to explore northern Patagonia’s backwaters. The fisherman communities that dot this island are known for their coveted black-lipped oysters and curanto-style cooking (seafood steamed underground).
